B: Cheerios and Silk(R) Soymilk

L: Freshly cooked rice w. cabbage and fish ball dish

D: Chicken soup with rice


It went essentially, like this:

*Chicken, cooked, shredded, as much as you want
*Water (to cook chicken in first, and later, to act as broth for soup)
*Salt and pepper
*Cooked rice
*Shiitake mushrooms^
*Frozen veggies (celery, water chestnut, carrot, onion, snap pea) & bok choy, sliced finely
*Cornstarch and water mix

Omitted: broken spaghetti noodles, garlic, and sesame oil

Soak and slice mushrooms.
Slice bok choy.
Cook chicken in pot of water, undercook a bit. Remove from hot water, let cool. Shred chicken into strips or bite-size pieces.
Warm water. Add chicken, finish cooking. Add frozen veggies or bok choy, mushrooms, and garlic.
Salt and pepper.
Cornstarch and water mix.
Sesame oil, if desired.
Remove from heat. Add rice. Serve hot.

D: Anthony's Pasta(R) Linguine w. sliced beef, yu(2) chai(4), imitation crab meat, yu(2) ban(3), with Japanese broth stock.


First time using the broth stock, it was good. I was unpleasantly surprised by its appearance, like tiny little pellets with a resemblance to... (I'll leave it up to your imagination), but it came in pretty handy. I'd had trouble figuring out how to flavor my noodle soups.

D: Dining commons meal #5 - soymilk, rotisserie chicken w. cauliflower and broccoli, and scalloped potatoes

Dessert: Rice Krispies Treat, Krusteaz(R) Banana Chocolate Chip Cookies, and Brownie Cake.

It was Sam's surprise birthday celebration! I made banana chocolate chip cookies for the first time. I think the idea of them sound better than they taste in actuality. The banana and the chocolate don't quite mix. Still, it was fun to try the recipe.

L: I went to pick persimmons. Jim, our supervisor of the day, pleasantly surprised us by buying Rusty's Pizza Parlor(R) thin crust cheese pizza. It was promptly delivered to the orchard where we were, which I thought was pretty cool.

D: I attended Chinese Church's Thanksgiving celebration. There was amazing food! I had two different types of noodles, tofu, mushroom, chicken, chocolate cake, inter alia*.

D: Yakisoba noodles w. seasoning and stir-fried with carrot coins, Albertson's(R) homestyle meatballs (in quarters), and red bell pepper


Needless to say, the meal was just like eating the different components separately. The combination did not mix.

Later Dinner: I wasn't satiated so I happily bought more food later. Subway(R) 6" oven roasted chicken breast sub on parmesan oregano bread w. lettuce, tomato, olives, red onion, and mayo.

Then, I was fortunate enough to enjoy Helen's Aunt Jemima(R) buttermilk pancakes w. chocolate chips, along with a sampling of Leinah's Chex Mix, Turtle.

S: Cocoa Puffs

D: Rice (freshly cooked, as well as previously refrigerated) w. stir-fry/steamed broccoli w. garlic, and "3 basil chicken, " in Chinese, "san(1) bei(1) ji(1)."

From what I can tell, one should cook broccoli at low heat, and let it simmer in medium heat in water. Otherwise, it's hard to make it soft enough to eat without browning it. It helps to cut it into smaller portions, as well. Any tips? Should I just boil it in water before stir-frying it?
