Chicken teriyaki and stir-fry vegetables with white rice

Foods for the week!

Penne pasta with spinach and chicken breast, with grated parmesan cheese


Sliced apple


Yoplait(R) 6 oz. Apple Turnover yogurt


Costco(R) chocolate muffin


Sliced pear. Orange juice and cran-raspberry juice mixed drink. (Good!)


Rice with salmon fillet with steamed broccoli and carrots


Bagel with scrambled egg (egg, green onion, cheddar cheese)

Jan 7 - Jan 12

Hello, I'm back! It's been about a month since I last posted on here. I've decided to post on a weekly basis for the quarter.

My focus last quarter was on eating well consistently. The added focus this quarter will be on preparing meals quickly.

Foods for this week:

Yoplait Smoothie, Strawberry Banana, 8 fl. oz.


Red bean rice with bulgogi (Korean BBQ beef) and spinach


Subway(R) sweet onion chicken teriyaki 6" on honey oat


Chow mein with spinach


Linguine with spinach, Prego(R) meat-flavored sauce, and Albertson's(R) Homestyle meatballs


Chow mein w. bee bim bap (Korean dish)


If I were on Iron Chef, the secret ingredient would have been spinach. I bought a huge bag of it, and have been adding it to all my home-cooked meals since. =)

Chicken & spinach pasta in pesto sauce
Garlic bread

Delicious =)

D: Chicken soup w. rice
Rice w. cabbage and fish ball dish


As an addendum, given it's finals week, assume the glad-to-oblige consumption of chocolate! Haha, I don't know :-P

Snack: Cabbage and chicken dumplings w. soy sauce, sesame oil, and minced garlic

D: Dining commons meal #2 - soymilk, chicken w. vegetables in peanut sauce, 2 pieces of focaccia bread

B: Cheerios and Silk(R) Soymilk

L: Freshly cooked rice w. cabbage and fish ball dish

D: Chicken soup with rice


It went essentially, like this:

*Chicken, cooked, shredded, as much as you want
*Water (to cook chicken in first, and later, to act as broth for soup)
*Salt and pepper
*Cooked rice
*Shiitake mushrooms^
*Frozen veggies (celery, water chestnut, carrot, onion, snap pea) & bok choy, sliced finely
*Cornstarch and water mix

Omitted: broken spaghetti noodles, garlic, and sesame oil

Soak and slice mushrooms.
Slice bok choy.
Cook chicken in pot of water, undercook a bit. Remove from hot water, let cool. Shred chicken into strips or bite-size pieces.
Warm water. Add chicken, finish cooking. Add frozen veggies or bok choy, mushrooms, and garlic.
Salt and pepper.
Cornstarch and water mix.
Sesame oil, if desired.
Remove from heat. Add rice. Serve hot.
